I don't recall Winamp being able to add or remove channels at the DSP stage, so it's up to the input plugin to support that. Or the output component, since the two practically connect directly in their ancient ecosystem.
If you're looking to remove all audio channels except left/right, Audacity can do that. Then export to whatever format you want. Provided Audacity can open the file in the first place, that is.
