You'll probably want to use the Bridge GUI for it, which is here: http://www.e2j.net/downloads.html

You don't need special sound files. M1 is a sound-only multiple arcade emulator that uses the ROMs you already have, and it can record the songs (and often sound effects) to .WAV.

The quality should be preserved if you use the proper sample rate and bit depth.
